So, since I had seen a bunch of comments about position changes affecting players' stats (and EA put a disclaimer in the game as such whenever moving a players' position) I decided I'd do some homework on swapping positions for various players.

How I went about it was I took five players for every change and looked at what stats were altered. I started by recording start and end point changes, but soon noticed it looks like they're all done by percentages, not a set number of points.

One thing I noticed is that moving left to right (and right to left) will not change any stats. Yes, scheme overalls will change, but actual stats will not.

These are all rough approximations, since some varied from 4% to 6%, but it seems like it was really 5% rounded to the closest whole number. For example, a TE with 70 catching dropped 5.71% from 70 to 66 catching, since they rounded up 3.5 points to 4 when doing the 5% calculation, while a TE with 65 catching dropped 4.62% to 62 catching since they rounded down 3.25 points to 3. I'm not entirely sure if that's the system they used, but after five trials of each swap it seemed to be pretty accurate.

So here's what I got. You can at least use these to get an estimate on what stats will drop and roughly how much.
